Yup, we’re here to bust the stereotype that a vegetarian diet is bland and boring. The following recipes are way out of the bean curd box, from fermented chickpea pancakes to sweet potato pasta to pies filled with stinging nettles (yes!). You’ll never be stuck in a rut again!
It’s “pasta” made of sweet potatoes! And if that doesn’t convince you, the Thai-inspired tahini sauce might just do the trick.
This recipe is perfect for when you want the Asian flavours, just without the sugar and heavy grease. It even includes cauliflower rice to get more serves of veggies in.

Chickpeas are also a great source of protein, but they can be a little rough on your tummy. That’s why we’ve soaked them to get rid of the harsh outer enzymes (and make the most delicious, soft golden pancakes).
Yes, nettle is that plant which gives you stinging rashes. But it’s also one the most delicious and nutritious greens around. If you can get your hands on them, a quick soak will get rid of the stinging chemicals and you can then cook them how you like. (It tastes like spinach, by the way!)
When you think of vegetarian burgers, does your mind immediately conjure up a mushroom patty? While we love mushroom burgers too, these carrot tahini patties buck the trend and won’t drip endless amounts of juice onto your plate.
